    Tasting notes

    Enjoy with a ribeye steak, a fillet of beef, or even a Burgundy-style eel stew. Serve at around 16°C, opening the bottle well in advance of tasting.

    Owner and history

    The vineyard covers approximately 60 hectares of vines on a terroir of deep gravel and a clay-clay subsoil. Since 2016, the vineyard has been certified organic and biodynamic. Agroecology is also used to restore biodiversity within the vineyard and adapt to climate change.

    Vinification and aging

    - The winemaking process is carried out on a plot-by-plot basis.
    - Alcoholic fermentation with natural yeasts
    - Gentle and regular pump-overs to gently extract the aromas from the grapes
    - Aged for approximately 18 months in barrels (70 of which are new) and in amphorae (approximately 30%)
