      Bollinger (Aÿ) : Founded in 1829, this family-owned House embodies the powerful, vinous style, famous for its independent management and its historical use of oak barrels for reserve wines.

      Ayala (Aÿ) : Created in 1860, it distinguished itself early on with a pure and modern style, being one of the first to introduce a very low dosage in its vintages.

      Moët & Chandon (Épernay) : Established in 1743, the House is synonymous with splendor and celebration, having been popularized by Napoleon, and remains the leading figure of Champagne luxury.

      Bollinger Champagne - Special Cuvée NM. Its color is a deep gold, revealing a complex nose of baked apple, nuts, and spicy notes. The palate is full and vinous, with a powerful structure and creamy effervescence. The finish is long, marked by the complexity of Pinot Noir and a hint of oak.
      Champagne Ayala - Perle d'Ayala 2012 This Blanc de Blancs boasts a crystalline appearance and delivers refined aromas of chalk, linden blossom, and acacia honey. The attack is precise and pure, carried by exceptionally fine bubbles and remarkable mineral tension. The elegance persists on the palate with a long, chalky finish, a reflection of its extended aging.
      Moët & Chandon Champagne - Impérial. Its color is straw yellow with green highlights, and it boasts a luscious bouquet of white fruits, citrus, and brioche notes. The palate is fresh, lively, and perfectly balanced, offering a harmonious and approachable texture. This is a consistent and persistent Champagne, celebrating the vivacity and unwavering style of the House.

      The Champagnes in this set draw their finesse from the chalky and limestone soil typical of Champagne, essential to the minerality and freshness of the bubbles.

      Bollinger (Aÿ): The heart of the vineyard extends over 178 hectares, mainly in Grands and Premiers Crus around Aÿ, Tavernay and Verzenay, mostly planted with Pinot Noir.
      Ayala (Aÿ): The House prioritizes sourcing Grands Crus from the Côte des Blancs (Chardonnay) and the Montagne de Reims (Pinot Noir), for optimal purity and finesse.
      Moët & Chandon (Épernay): Their estate covers more than 1,190 hectares of vines, spread over the best terroirs of the region, ensuring the balance and diversity necessary for the blending of their Brut Impérial.

      Owner and history

      Bollinger: An iconic house that has remained family-owned and independent since its founding in 1829, under the aegis of the Bollinger/Nonancourt family.
      Ayala: Founded in 1860, the House is now owned by the Bollinger family (since 2005), which guarantees continuity in the quest for finesse and purity.
      Moët & Chandon: Owned by the luxury group LVMH (Louis Vuitton Moët Hennessy), perpetuating a legacy of grandeur initiated more than 280 years ago by the Moët family.

      Vinification and aging

      Each of these Houses uses distinct blending and maturation techniques to forge its identity.


      Bollinger - Special Cuvée NM: Made with reserve wines aged in oak barrels and in cork-sealed magnums. Fermentation takes place primarily in oak barrels for a complex, vinous character.

      Ayala - Perle d'Ayala 2012: Precise plot-by-plot vinification. Very low dosage and long aging on lees (nearly 10 years) to develop bubbles of rare finesse and purity.

      Moët & Chandon - Impérial: A blend of a wide variety of crus and reserve wines to guarantee consistency in style. Aged in cellars to achieve its characteristic maturity and roundness.
