      Vieilles Vignes Côtes du Roussillon Villages from Domaine Gauby pairs perfectly with a rack of roast lamb, a veal tagine with prunes, or a fine rib of beef. Serve at around 15°C.

      Owner and history

      The vines are between 30 and 120 years old and are cultivated biodynamically. Polyculture is also practiced throughout the vineyard.

      Vinification and aging

      - Hand-harvested grapes
      - Traditional winemaking in concrete vats (whole bunch maceration)
      - Gentle pressing
      - Aged for 10 months in 500L barrels (oak or concrete) and for an additional 7 months in the bottle
