Notes and pairings

Notes and pairings

Tasting notes

With its brilliant golden hue, this white Saint-Joseph first captivates with its intense nose, blending mineral aromas with floral notes of honeysuckle and lily, complemented by a hint of beeswax, Tabasco, and honey. On the palate, the attack is ample and balanced, carried by great harmony. A generous and elegant texture is enlivened by a structuring freshness. The long and persistent finish reveals a touch of spice, evolving over time into particularly enchanting honeyed nuances.

Food & wine pairings

Perfect with a soft-boiled egg, a mushroom emulsion, Comté cheese or walnut kernels.

Owner and history

The Les Granits cuvée originates on the granite slopes south of Tournon, in poor, well-drained soils that impart the wine's minerality. The southeast exposure promotes gradual ripening, ensuring freshness and balance. Hand-harvesting, carried out in several passes, guarantees precise plot selection. The biodynamic approach enhances the pure expression of the grape variety and the terroir.

Vinification and aging

The grapes are pressed whole-cluster, and fermentation with indigenous yeasts takes place in large oak casks, demi-muids, and stainless steel tanks. Eleven months of aging on the lees, with bâtonnage (lees stirring), imparts texture and complexity. New oak is used sparingly (10%), preserving the wine's finesse. The result: a floral and mineral Saint-Joseph white wine of remarkable aromatic precision.
