    Vinification and aging

    Winemaking at Domaine Mongeard-Mugneret is carried out with meticulous care. After hand-harvesting the grapes, they are destemmed before being placed in vats for controlled fermentation. Long macerations allow for the extraction of all the color and aromas of the Pinot Noir. Aging takes place in oak barrels, some of which are new, to impart a subtle woody touch while respecting the fruit. This aging process, which lasts between 12 and 18 months, allows the tannins to soften and the aromatic complexity of the wine to develop, while preserving its authentic character.
