Vinification and aging

Winemaking at Domaine Faiveley is a meticulous process. The Pinot Noir grapes are carefully hand-harvested and sorted to guarantee their quality. After partial destemming, alcoholic fermentation takes place in temperature-controlled tanks, allowing for precise temperature management. Aging in oak barrels, some of which are new, lasts approximately 16 to 18 months, giving the wine structure and complexity while respecting the expression of the terroir. This care at each stage ensures the harmony and balance of aromas.
