Vinification and aging

The winemaking process for Bâtard-Montrachet Grand Cru at Domaine Faiveley is carried out with meticulous care. The grapes are harvested by hand and then rigorously sorted to retain only the finest bunches. After gentle pressing, the juice is fermented in oak barrels, where it undergoes malolactic fermentation, which softens its acidity. Aging lasts approximately 12 months in barrels, some of which are new oak, adding structure and complexity while respecting the wine's unique character. Each step is carefully considered to enhance the terroir and bring out the typicity of Bâtard-Montrachet.
