Her ambition: to promote Tuscan wines throughout the world, while respecting the environment and valuing the work of her teams.

Vinification and aging

Giusto di Notri's winemaking is carried out with the utmost care, respecting both tradition and innovation. The grapes are hand-harvested at optimal ripeness and then rigorously selected. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks to preserve the fruit's aromas and flavors. Maceration is extended, allowing for the gentle extraction of tannins and phenolic compounds. The wine is then aged in French oak barrels for 18 to 24 months to refine its structure and complexity.
