    Owner and history

    Covering approximately 4 hectares, the plot that gave its name to this single-vineyard selection has a very particular geology. It consists of a thin layer of sediment resting on a granite subsoil. The Syrah vines used in the Pavillon are 90 to 100 years old; the age of the vines limits yields but concentrates the aromas.

    Vinification and aging

    - Hand-harvested at the limit of over-ripeness.
    - Winemaking in concrete tanks
    - Maceration for 4 to 5 weeks
    - Use of free-run wine only
    - Aged in oak barrels (30% new) for 18 to 20 months
