    Owner and history

    A monopoly inherited from Emile Juillot, La Cailloute comprises vines planted between 1979 and 1980, covering 1.5 hectares. The Pinot Noir grapes grow at an altitude of 300 meters, benefit from perfect sunshine, and are cultivated without herbicides.

    Vinification and aging

    - Hand-harvested followed by sorting on a table
    - Cold pre-fermentation maceration, fermentation followed by regular punch-downs according to the vintage's characteristics
    - Aged in barrels, 25% of which are new, for 12 to 15 months
