The Bonnes-Mares vineyard, located in the commune of Chambolle-Musigny, is a Grand Cru emblematic of the Côte de Nuits. The soil, composed of limestone and clay, gives the wines exceptional minerality and aromatic depth. climat The region's temperate climate, with hot summers and cold winters, allows for optimal grape ripening. The vines, some decades old, have deep roots in this unique terroir, producing superior quality grapes.

Owner and history

The trading house Louis Jadot The winery has been owned by the Kopf family since 1985 (three sisters). Thomas Seiter has been its president since 2022. Thibault Gagey, son of Pierre-Henry, has also been the managing director since 2022, and Frédéric Barnier is the technical director (who succeeded Jacques Lardière in 2010). Vinification and aging

Winemaking at Domaine Louis Jadot It is a meticulous process, respecting traditions while incorporating modern techniques. The grapes, harvested by hand, are destemmed and gently pressed. Fermentation takes place in wooden vats, allowing for a delicate extraction of aromas and tannins. After fermentation, the wine is aged in oak barrels, some of which are new, for 12 to 18 months. This aging process gives the wine its complexity and structure, while preserving the authenticity of the terroir.
