    Vinification and aging

    Winemaking at Domaine Faiveley is a meticulous art. After a manual harvest, the grapes are destemmed and fermented in stainless steel tanks to preserve the purity of the aromas. The wine is then aged in oak barrels, some of which are new, to impart complexity and elegance. This aging process lasts approximately 12 to 18 months, depending on the vintage.
