    Vinification and aging

    Winemaking at Domaine Faiveley is a meticulous art, blending tradition and innovation. The grapes are carefully hand-selected and destemmed before being placed in vats. Fermentation takes place in wooden or stainless steel tanks, depending on the vineyard plot. Aging occurs in oak barrels, some of which are new, to impart complexity and structure to the wine. This process, which can last up to 18 months, allows the aromas to develop and achieves a perfect harmony between the fruit and the oak.
