    Owner and history

    The vines are cultivated with the utmost respect for the environment. The Chenin Blanc vines, averaging 35 years old, are grown in a 6-hectare plot within the Savennières appellation. The vines are situated on either side of a path whose shape evokes the wings of a butterfly, hence the name of this plot.

    Vinification and aging

    - Hand-harvested with strict sorting in the vineyard
    - Long fermentation at low temperature (dry wine)
    - Aged for 9 months in tanks on fine lees
