    Owner and history

    The white wine from Château Simone comes from a vineyard planted in limestone, clay, and stony soils. Surrounding the vines is a wide variety of woods and plant species. The vines are over 50 years old and up to 100 years old!

    Vinification and aging

    - Hand-harvested grapes followed by complete destemming of the bunches
    - Fermentation with natural yeasts
    - Aged for 18 months, including 6 months on fine lees in small casks followed by 12 months in barrels
