    This wine pairs perfectly with a rack of lamb, pork chops with thyme, or a royal couscous. Serve it at around 15°C. When young, don't hesitate to decant the wine or open it well in advance of tasting.

    Owner and history

    Peter Fisher applies biodynamic principles to his vineyard. The beauty of the wine stems from the quality of the grapes, and he is committed to allowing the terroir to express itself. The vineyard covers 24 hectares surrounded by lush vegetation. The influence of the altitude and the protection of the Sainte-Victoire mountain bring added freshness to the vines.

    Vinification and aging

    - Hand-harvested grapes in crates
    - Aged in barrels for 14 months with 20% new barrels and barrels that have held 1 to 5 wines
