    Owner and history

    Located in Saint-Emilion, the Château Pavie vineyard covers 37 hectares on the limestone plateau of Saint-Emilion. On average, the vines are around forty years old.

    Vinification and aging

    - Gentle extraction, cold soaking one week before fermentation
    - 5-week maceration
    - Aged in 80% new oak barrels and 20% barrels that have held one wine
