    The history of the estate

    An inspired and inspiring winemaker.

    Dominique HauvetteShe settled there and harvested her first vintage in 1988 with only 2 hectares of vines. She moved toProvenceIn the 1980s, her neighbor offered to sell her his vineyards before retiring. This daughter of restaurateurs then learned the trade from talented winemakers like Eloi Dürrbach.(Trévallon)and Laurent Vaillé(The Fathers' Barn).Little by little, the winemaker expanded her estate, which now covers 17 hectares. Her assertive character and strong personality are reflected in her wines. She has become one of the key figures inProvenceThe Revue des Vins de France awarded her its highest rating of 3 stars and named her Winemaker of the Year. This dedicated and inspired woman has made her mark inProvenceand is now a true icon.

    In 2003, the domain was converted intoorganic farmingthen inbiodynamicsThe estate produces a majority of red wines fromCabernet Sauvignon, Syrah, Cinsault and GrenacheWhite wines are rare and come fromRoussanne, Marsanne and Clairette.

    Dominique Hauvetteseeks to respect the soil and highlight the authenticity of the terroir. This is achieved through low yields, manual vineyard work, and the elimination of herbicides and insecticides. The vineyards are located in the heart of a Provençal landscape, at the foot of the Alpilles mountains, within the appellation ofBaux-de-Provence and the Alpilles PGI.

    The style of the wines

    Exceptional reds and rare whites

    In the cellar, vinification is carried out without sulfur, with complete destemming of the grapes. The wines are aged in egg-shaped tanks. These cement eggs contain no iron and accentuate the minerality of the terroir. The wines are eminently complex, incredibly elegant, and imbued with the terroir of theAlpilles.

    • The estate is renowned for its superb red wines, made without added sulfites. The winemaker chooses cement amphorae for aging her wines. Structured and spicy, the reds are incredibly elegant and full of minerality. The wines are refined, evoking the garrigue and spices.
    • The egg whites are produced in very small quantities fromRoussanne, Marsanne and Clairette.They are very pure, with a beautiful energy and reveal the minerality of the terroir.

    The reputation of these wines continues to improve. Critics are unanimous in praising the purity of these characterful wines.
