    The History of the Estate

    A couple of passionate people

    Julien and Delphine Zernottsettled inNot from the EscaletteIn 2003, after exploring the finest Languedoc vineyards, the couple fell in love with this exceptional terroir. Their estate is located in Poujol, at the foot of the Larzac plateau. Drawing on their experience atHenri Pellé, in Menetou-SalonThey produce wines full of finesse and elegance. They initially maintained their business in Berry before dedicating themselves fully to this new estate. Le Pas de l'Escalette was born from passion, hard work, and great determination. These two strong characters recognized the potential of this vineyard in theLanguedocand have turned it into a true gem.

    The Pas de l'Escalette vineyard

    A unique setting in an exceptional local area

    THENot from the Escalettedesignates the essential passage between the Larzac and the Mediterranean.Not from the Escaletterefers to the ladders used several centuries ago to descend from the plateau to the valley ofLodèvebelow. Here lies a true haven of coolness where old vines are surrounded by low walls and positioned in terraces.

    In this unique setting, the vineyard stretches across approximately twenty hectares spread across fifty terraces. The soil is composed of limestone scree, and the vines are surrounded by dry stone walls and clapas (stone walls). The vineyard benefits from optimal irrigation. These particular climatic and geographical conditions bring freshness and finesse to the wines. The entire vineyard is certified organic.organic farmingand inbiodynamicsOnly southern grape varieties are used, such as Grenache, Carignan, Syrah, and Cinsault. For white wines, old vines of Grenache, Carignan Blanc, and Terret Bourret are used.

    The vines benefit from optimal conditions to produce fresh and balanced wines.Pas de l'Escalette Estateonly produces single-vineyard wines. In this way, each of the steep terroirs, terraces and their altitude are highlighted in the wine.

    The term "Clapas" refers to the dry stone walls that surround the old vines in theLarzacLike this environment,The Clapasis a mineral cuvée. The Syrah is vinified as whole bunches, which adds a sapid character. The spice of theSyrahthe gluttony ofGrenacheand the warm character of theCarignanThey harmonize perfectly.
