Between strength and peace

THE STORY OF AN AMBITIOUS FAMILY

In the local Bordeaux dialect, "Pez"Elme" means Peace. The elm, even though it is an extinct species, is one of the most resilient trees. Peace and strength thus found a home in the 18th century when the Château Ormes de Pez was built.

With a long history and the passing of many illustrious owners, Château Ormes de Pez found stability in 1890. It was in this year that Jean Guillou, the Château's cellar master, married Marie Cazes. The First World War brought an end to the winemaker's career. His wife then took over the reins of the Château. Her brother acquired the property in 1940. Thus, it was at this time that the property became part of the estate of theCazes family.

In 1950, theOrmesThey disappear, but the name remains. Major renovations are undertaken following the official arrival of the Cazes family. TodayJean-Michel Cazeswho manages the estate and ensures the reputation of this fine Cru Bourgeois.

Viticulture

TECHNOLOGY AT THE SERVICE OF QUALITY

This allows winemakers to ensure the vines' natural competitiveness, resulting in concentrated grapes.

In the northern part of the appellation, the vineyard has benefited from technologically advanced management since 2010. This has allowed for the development of in-vineyard management, ensuring more tailored treatments based on soil type and grape variety. Simultaneously, the equipment has also been modernized. The viticulture practiced at the estate is sustainable; no chemical inputs are used, and massal selection is regularly carried out. As a result, the estate maintains an average vine age of 35 years.

A way of life

THE PRODUCTION OF A HARMONIOUS AND GENEROUS WINE

During the manual harvest, the grapes are sorted directly in the vineyard. When the harvest arrives at the estate, it is placed in temperature-controlled stainless steel and concrete tanks for maceration and fermentation. Pump-overs are performed daily. This process takes about twenty days. Afterward, the young wines are transferred to...oak barrels,45% new. Aging lasts a minimum of 15 months, depending on the vintage.

Theretraditional winemakingis orchestrated byDaniel Llos and Nicolas LabenneThe wines are blended at the end of the aging process. Upon tasting, they reveal themselves as characterful and harmonious cuvées.
