Vinification and aging

The vinification of Clos des Cortons Monopole 2024 is carried out with the utmost care. The grapes are meticulously hand-sorted before being destemmed. Fermentation takes place in stainless steel tanks to preserve the purity of the fruit, followed by aging for 12 to 18 months in oak barrels, some of which are new, to add further complexity to the wine. This painstaking process reveals the full richness and finesse of the Pinot Noir, while respecting the identity of the terroir.
