Description

The Château de Chamirey - Mercurey 1er Cru "Clos de l'Évêque" 2024 is a historic and emblematic cuvée. If Clos du Roi represents power and Maladière elegance, Clos de l'Évêque is often described as the wine of perfect balance and refined indulgence.
Formerly owned by the Bishops of Chalon, this walled vineyard enjoys a privileged location. The soil is particularly complex, combining heavy clays and fine limestone. This duality allows the Pinot Noir to express both a beautiful roundness on the palate and great aromatic finesse.

Vinification and aging

With quality in mind, the grapes are harvested by hand. The harvest is then manually sorted and 100% destemmed. After the vat is filled, a pre-fermentation cold maceration of 4 to 6 days at 10°C helps extract color from the skins. Natural fermentation then begins at 24°C, rising to 31°C in its final phase. The extraction of phenolic compounds is achieved through punch-downs, the intensity and frequency of which vary depending on the quality of the grapes and therefore the vintage. Post-fermentation maceration helps soften the tannins.
