    Vinification and aging

    Winemaking at Taittinger is carried out in accordance with Champagne traditions. The carefully selected grapes are gently pressed to extract their juice. Alcoholic fermentation takes place in stainless steel tanks, preserving the freshness and purity of the aromas. Aging on the lees adds richness and complexity to the wine. Finally, the secondary fermentation in the bottle, followed by aging on the lees, develops the finesse of the bubbles and the depth of flavors, resulting in a Champagne of great elegance.
